100% Arinarnoa.

REGION
Cerro Chapeu, Rivera, Uruguay. 250 meters above sea level. Continental climate with great thermal amplitude.

SOIL PROFILE
Soils of alluvial origin from volcanic materials washed over millions of years that formed very deep reddish sediments rich in iron, with great depth and good drainage.

HARVEST
Picked by hand with 15 kg boxes.

ELABORATION
The whole bunches of Arinarnoa are kept in a closed tank for 10 days, then they are pressed and the alcoholic fermentation ends in a new stainless steel tank. Fermented with selected autochthonous yeasts. minimal intervention. SO2 only when bottling, without filtering, without clarifying.
